These vegetables always turn out so delicious when made in the air fryer. Using an air fryer for vegetables makes them come out so crispy and seriously takes only 10 minutes. As opposed to an oven that takes far longer.
Tossing your veggies in Bitchin’ sauce is seriously a game changer too. I found a pack of 3 assorted Bitchin’ sauces the other day at Costco and cannot stop eating them now. They are vegan and so so good!
I make this salad at least a couple of times a week once the weather turns colder because it’s seriously such a delicious and cozy side to any meal. Although I personally find the Trader Joe’s grilled teriyake chicken to be the absolute best combo!

The Best Ever Air Fryer Roasted Vegetable Salad
Ingredients:
Veggies:
- Zuchini
- Bell Pepper
- Red Onion
- Bitchin' Sauce
Dressing:
- Bitchin' Sauce
Seasoning:
- Salt and Pepper
- Trader Joes Cheese Seasoning
- Turmeric
- Onion Powder
- Garlic Powder
Instructions:
1. Gather and wash all of your ingredients. You can use however much you like of each for the amount of service sizes you want.
2. Cut them up into uniform, bite sized pieces. Put some tinfoil onto the bottom of your air fryer and spray with light coat of oil.
3. Pick out your favorite seasonings. I use salt, pepper, turmeric, garlic powder, onion powder, and Trader Joe’s Cheesy seasoning blend.
3. Season you veggies and roast in the air fryer at 350 for 10 minutes. (I never preheat my air fryer)
4. For the dressing use any flavor of Bitchin’ sauce. It’s an amazing and low-calorie, vegan sauce. Add some water to thin it out if needed.
Optionally cut up fresh jalapenos.
5. Once the veggies are done roasting, mix and enjoy!
